This wine is made from at least 85% Sangiovese grapes, complemented by other red grape varieties such as Merlot or Foglia Tonda. The carefully selected grapes are vinified using traditional methods. The resulting wine is an expression of the flavours and aromas of these lands. Clarification, carried out by natural decantation, can create sediment after a long period in the bottle. The suggested serving temperature is 16-18 °C. 1,200 bottles are produced per vintage.
A Tuscan IGT (Supertuscany) red produced with the best grapes of the vintage. It is aged for eighteen to thirty months in oak barrels and refined for at least six months in the bottle. Grape selection involves drastic green harvesting/thinning, which leaves only one bunch per vine based on the size of the bunch. Fertilisation is alternated: one year, organic fertilisation by sowing field beans, barley and oats in alternating rows, while the following year, very light organic fertilisation is carried out.
The Risala harvest is a late harvest: the last harvest on the estate. Only 600 bottles are produced per vintage.
Since 2017, 300 bottles per vintage have been produced with 100% Foglia Tonda, a grape variety native to Tuscany. Vineyard exposure: South-West. Altitude: 354 metres above sea level. Training system: spurred cordon and Guyot.
STRICTLY ORGANIC
Erta oil. What can we say? You would have had to be here between April and November. To have walked among the olive trees and seen the growing fruits of the tree into which the bed of Odysseus and Penelope in Ithaca was carved. But now that the olives are almost ripe for harvesting, we are readying the nets, crates, tractors and, finally, the oil mill, for intense days of work. The result is a cold-pressed extra virgin olive oil with almost no acidity, which develops its aroma and flavour day after day. When freshly pressed, it is green and slightly “pungent”, ideal for use raw to add flavour to your dishes. Try it on stockfish in the first few days after pressing: a truly unique gastronomic experience.
Erta oil is also infused by Varno with rosemary or chilli pepper, making it an excellent condiment for winter soups and summer salads.
Jams and infused oil. Simple, organic, genuine products. The delicious vegetables and fruits grown in Erta’s vegetable garden include tomatoes, artichokes, onions, courgettes, and more, which are prepared for consumption during the winter. Our products are strictly organic: their appearance, quality and flavour depend solely on the clemency of the weather and our care.
Our guests can enjoy tomato soup, onion jam (delicious with ricotta), fig and blackberry preserves and many other products.
